Cocktails | Watermelon Mojito

One last taste of summer! Extend summer for a few more months by keeping some watermelon juice in your freezer, just thaw and make a mojito!
Yield: 2 servings
Ingredients
10 large fresh mint leaves, coarsely torn by hand
3 ounces simple syrup
1 ounce fresh lime juice
4 ounces premium light rum
6 ounces watermelon juice
splash of club soda (optional)
Method
Put mint leaves, syrup, lime juice, and rum in a cocktail shaker. Muddle. Add in watermelon juice, and stir. Fill 12 ounce highball glass with crushed ice. Pour mixture over ice, top with a splash of club soda.
You can get about 3 cups of watermelon juice from a 3 pound chunk of watermelon. Cut away the rind, remove any seeds, and then cut the juicy, pink flesh into cubes and puree them in a blender or food processor. Any extra juice can be frozen.
