Cocktails | Watermelon Martini

These are so good! Perfect for summer barbecues.
Yield: 2 servings
Ingredients
1 cup watermelon juice
4 ounces lemon infused vodka
2 ounces simple syrup
juice of 1 lime
2 tablespoons salt, for rim
2 tablespoons sugar, for rim
Method
Mix together the sugar and salt. Note that this is somewhat to taste. We found that we liked more sugar than salt, so adjust the mixture according to your taste. Wet the rim of each glass with a slice of watermelon or lime, then dip each glass into the sugar/salt mixture.
Place the watermelon juice, vodka, simple syrup, and lime juice into an ice filled (about 2/3 full) cocktail shaker. Shake well. Pour into martini glasses.
I find that I get about 3 cups of watermelon juice from a 3 pound chunk of watermelon. Cut away the rind, remove any seeds, and then cut the juicy, pink flesh into cubes and puree them in a blender or food processor.
