Cocktails | Watermelon Margaritas

This recipe is based on the "Lolita Squeeze" in the Tacolicious cookbook. We multiplied the drink by ten and increased the agave syrup by three ounces. Also eliminated the chile salt and cilantro. We wanted to make a make-ahead party drink. Pour these into Flow-n-Stow containers and you are ready to party! We also made a batch of virgin drinks, same ingredients and measurements, minus the tequila.

Party note: Make 3 batches regular and one virgin.

Yield: over 10 drinks per batch

watermelon margarita

Ingredients

20 ounces watermelon juice

18 to 20 ounces 100% blanco agave tequila

10 ounces freshly squeezed lime juice

8 ounces agave syrup

 

Method

Make the agave syrup:

Mix 4 ounces light agave nectar with 4 ounces of warm water. Store in refrigerator. Lasts a long time, can make ahead.

Make the watermelon juice:

Scoop the flesh from ripe, seedless watermelon. Puree in a blender. Strain. One or two small watermelons per batch.

Mix watermelon juice, tequila, lime juice and agave syrup together. Serve over ice.
