Thai | Thai Carrot and Mango Salad

Great fresh taste. You can scale this recipe up or down to whatever size you want.
Yield: 4 servings
Ingredients
SALAD
1 pound carrots, peeled, coarsely grated
1 ripe mango, peeled and sliced into angular shapes
1 small red onion or shallot, sliced into rings
1 small box firm tofu, cut into 1/2 inch cubes
DRESSING
1 teaspoon honey
1 tablespoon soy sauce
1 tablespoon fresh lime juice
3 tablespoons fresh orange juice
kosher sea salt, to taste
freshly ground pepper, to taste
TOPPING
1 tablespoon chives, thinly sliced
2 tablespoons cilantro, finely chopped
1 tablespoon toasted sesame seeds
Method
Mix together carrots, mango, shallot, and tofu. Whisk together dressing and pour over salad. Mix gently. Top with chives, cilantro, and sesame seeds.
