Portuguese | São Jorge Cheese & Linguiça Appetizer

I was looking for appetizers to serve with a Portuguese themed dinner and found these in the La Salette Cookbook. I found the São Jorge cheese at Whole Foods in Cupertino. I have also ordered it from Portugalia Marketplace online.
Yield: 20-25 appetizers
Ingredients
1 5-ounce link linguiça
3 1/2 ounces grated São Jorge cheese
2 tablespoons mayonnaise
1 teaspoon chopped flat leaf parsley
20-25 pitted green olives
Method
Preheat oven to 400°F. Slice the linguiça into disks. Put on a baking sheet, and bake the linguiça for 25 minutes. (Cooking time depends. Last time I cooket at 375° for about 6 minutes, flipped, and cooked 5 more minutes.) Set aside and allow to cool.
Mix the cheese with the parsley and mayonnaise - the mayonnaise should bind the mixture together. Scoop balls of the bound mixture out using a small scoop about an inch wide. Make 20-25 equally sized balls (depending on the number of linguiça disks you have). Place each ball onto one linguiça disk and set aside.
Prepare 20-25 toothpicks by placing one olive about halfway up each pick.
To serve: preheat oven to 425°F. Place the prepared linguiça and cheese pieces onto a sheet tray and bake until the cheese starts to melt. Remove from the oven and skewer each piece with a prepared toothpick. Serve warm.
