Veggies | Roasted Delicata Squash

I get these in my farm basket every winter. This is the easiest way that I can think of to prepare them. You can also roast the seeds for a tasty snack.
Yield: 2 servings
Ingredients
1 Delicata squash
kosher sea salt, to taste
Method
Preheat oven to 350 degrees F.
Cut squash in half lengthwise. Scoop out the seeds and bake squash cut-side down for 30 to 45 minutes. Sprinkle with salt to taste.
To make roasted seeds, clean pulp from seeds. Spread seeds out on a lightly oiled cookie sheet and bake in 350 degree oven for 15 to 20 minutes, or until golden. Sprinkle with salt to taste.
