Vegan | Quinoa Oatmeal

I like to make a big pot of this and eat it all week for breakfast. Top with whatever you like.
4 cups hot water
1/2 cup quinoa
1 teaspoon olive oil
1 cut steel-cut oats
pinch of salt
1/2 cup rice milk
Put the quinoa in a strainer and rinse, otherwise it will be bitter after you cook it.
In a saucepan, heat oil over medium heat. Add the oats and stir them around until they smell toasty, about 2 minutes. Add the quinoa, water, and salt and bring to a boil.
Once it is boiling, turn the heat down and let simmer uncovered for 25 to 30 minutes. Turn off the heat.
Serve and pour rice milk in it, top with your favorite toppings.
