My Grandma Polly used to make these. Instead of the salted pork I used bacon.
Yield: 4 to 6 servings
Ingredients
2 cups pinto beans
4 cups water
1/4 pound salted pork, cut
1 onion, minced
1 clove garlic, crushed
hot chili pepper to taste
1 1/2 cups tomato sauce
1 teaspoon cumin
1/4 teaspoon cinnamon
1 bay leaf
salt and pepper to taste
Method
Wash beans and soak them in water overnight. In a skillet, fry pork and saute onion and garlic, add to beans in a kettle and enough water to cover beans. Bring to boil and add the rest of the ingredients. Cover and simmer for about 2 hours over low heat.
