Italian | Peach and Heirloom Tomato Salad

Refreshing and delicious! Perfect for summer time.
Yield: 4 servings
Ingredients
SALAD
4 large ripe heirloom tomatoes, seeded, and cut into large dice
2 large peaches, peeled, and cut into large dice
1/2 small red onion, thinly sliced
about 1/3 cup of the dressing (recipe below)
3 tablespoons thinly sliced mint or basil
DRESSING
2 tablespoons balsamic vinegar
2 tablespoons sherry vinegar
1/4 cup fresh orange juice
2 tablespoons freshly grated orange zest
kosher sea salt, to taste
freshly ground pepper, to taste
2/3 cup extra-virgin olive oil
Method
Whisk all dressing ingredients together in a small bowl. Combine all salad ingredients in another bowl and toss gently with 1/3 cup of the dressing. Top with mint or basil.
