Veggies | Orange-Avocado Salad

Simple, but really tasty. The photo in the cookbook has perfect avocado rings. I sort of did it for my photo, but usually I just chop up the oranges and avocados to make it easier.
Yield: 2 to 4 servings
2 firm, ripe avocados
2 tablespoons chopped scallions
2 tablespoons chopped fresh cilantro
Peel and slice oranges and avocados into rounds. Layer alternating on a plate. Sprinkle top with scallions, cilantro, olive oil and salt.
