Vegan | Kohlrabi SooFoo Saladvegan

My own creation. I was looking for a way to prepare kohlrabi and came up with this. If you can't find SooFoo, you can use brown rice or a mix of brown rice and lentils.

kohlrabi SooFoo salad

Ingredients

1 cup peeled and diced kohlrabi, about 2 small bulbs

1 cup SooFoo (may substitute brown rice or brown rice/lentil mix)

2 cups water

1 clove garlic, finely minced

1 tablespoon rice vinegar

3 tablespoons extra-virgin olive oil

kosher sea salt, to taste

freshly ground pepper, to taste

2 green onions or spring onions, thinly sliced

2 tablespoons finely chopped fresh cilantro

lettuce, amount is to taste

 

Method

Place SooFoo, kohlrabi, and water in rice cooker, cook.

Combine garlic and rice vinegar. Whisk in olive oil a little at a time to make dressing. Season with salt and pepper.

After rice/kohlrabi is cooked, transfer to bowl and add dressing, green onions, and cilantro. Mix well. Adjust seasonings. Place torn lettuce leaves on platter, season with salt and pepper. Arrange rice salad on top.

Variation: Fry onions in a little olive oil and use as a topping.
