Japanese | Japanese Restaurant-Style Saladvegan

We love this salad! My first time using sweet white miso paste and toasted black sesame seeds. Both can be found in the Asian section of the grocery store. I found both at Whole Foods. If you love the Carrot-Ginger dressing that is often served on salad at Japanese restaurants, this is it!

Yield: 4 servings

Ingredients

Dressing ingredients:

1 carrot, peeled and roughly chopped

1 shallot, peeled and roughly chopped

1 to 2 tablespoons roughly peeled and chopped fresh ginger

1 tablespoon sweet white miso paste

2 tablespoons rice vinegar

1 tablespoon light honey

1 tablespoon toasted sesame oil

1/4 cup grapeseed oil

2 tablespoons water

1/4 teaspoon fine salt

freshly ground black pepper, to taste

 

Salad ingredients:

1 head of Bibb lettuce, torn

1 ripe tomato, sliced

1/2 cucumber, sliced

1/4 red onion, thinly sliced (use mandoline)

Carrot-Ginger Dressing, to taste

toasted black sesame seeds, to taste

toasted white sesame seeds, to taste

fleur de sel, to taste

 

Method

Make Carrot-Ginger Dressing: Puree all dressing ingredients together in a powerful blender until absolutely smooth.

Make the Salad: Put the lettuce into a salad bowl and top with the tomato, cucumber, and red onion. Drizzle with plenty of the dressing, sprinkle with sesame seeds and a little salt.
