American | Honey Soy Chicken

Easy and good. You can marinate the chicken beginning in the morning or overnight to save time. I found that due to the sugar in the honey the chicken can burn easily. For best results use boneless skinless cutlets or butterflied skinless breasts.

Yield: 4 servings

Ingredients

2 teaspoons finely chopped lemon zest

2 tablespoons freshly squeezed lemon juice

2 tablespoons soy sauce

3 tablespoons honey

freshly ground black pepper, to taste

4 boneless half chicken breasts or cutlets

 

Method

Combine the lemon zest and juice, soy, honey and pepper in a large non reactive dish, then add the chicken breasts and toss to combine. Marinate for 20 to 30 minutes.

Place the chicken breasts, skin side down, on a preheated broiler pan or grill. Broil or grill about 3 inches away from the heat for 3 minutes on each side. Time may be longer depending on the thickness of your chicken. Allow to stand at least 10 minutes, before serving or serve at room temperature. Meanwhile, place the marinade in a small saucepan and simmer until reduced slightly. Pour over the chicken and serve.
