American | Heirloom Tomatoes with Shallot Vinaigrette

I made this with a Hawaiian steakhouse theme dinner. Check out Hawaiian Rib-Eye Steaks.
Yield: 1/3 cup of dressing
Ingredients
1 shallot, small dice
1 teaspoon Dijon mustard
4 teaspoons red wine vinegar
1/4 cup olive oil
1 teaspoon sugar (or to taste)
1 teaspoon honey (or to taste)
salt, to taste
pepper, to taste
heirloom tomatoes, sliced
Method
Whisk together shallot, Dijon and vinegar. While whisking slowly pour in olive oil. Add sugar and honey. Season with salt and pepper to taste.
Pour over tomatoes.
