Italian | Gene & Georgetti's Garbage Salad

Gene & Georgetti is a steakhouse in Chicago, this is a popular dish there. I posted the amounts per the recipe but I use more in some cases. I like to layer the dish, so it just depends what size platter that I use and how many people I am serving. It is always a crowd pleaser!
Yield: 4 appetizer servings
Ingredients
1/4 head iceberg lettuce, chopped (more)
3 ounces salami, sliced into 1/8-inch strips
3 ounces mozzarella cheese, sliced into 1/8-inch strips
2 ounces (1 whole) pimento sliced into 1/8 strips (or already chopped from a jar)
1/4 red onion, peeled, thinly sliced
4 radishes, trimmed and thinly sliced
1/2 stalk celery, cut into 1/8 strips (more)
2 tablespoons freshly grated Parmigiano-Reggiano cheese (more)
6 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
1 clove garlic, grated
kosher salt, to taste
freshly ground pepper, to taste
4 jumbo shrimp, cooked and chilled
Method
On a platter, layer lettuce, salami, mozzarella, pimento, onion, radishes, celery and Parmigiano-Reggiano.
In a small bowl, combine vinegar and garlic. Whisk in olive oil. Season with salt and pepper to taste. Pour over salad.
