Veggies | Frisee Kohlrabi Salad with Honey Mustard Dressing

Another farmstand meal! The honey-mustard dressing goes really well with the kohlrabi.
Ingredients
frisee lettuce, washed, dried and crisped
kohlrabi, stemmed, peeled, and cut into cubes
spring onions, thinly sliced
extra-virgin olive oil
garlic powder
kosher sea salt, to taste
freshly ground pepper, to taste
5 tablespoons of honey
3 tablespoons of Dijon mustard
2 tablespoons of rice vinegar
Method
Toss cubed kohlrabi with olive oil. Season with salt, pepper, and garlic powder. Roast in 400 degree oven for 35 minutes or until tender.
Sauté spring onions in olive oil. Season with salt and pepper.
Combine honey, Dijon, and rice vinegar in a small bowl. Whisk until well blended.
Assemble salad - frisee, roasted kohlrabi, sauteed spring onions and honey mustard dressing.
