Cuban | Cuban Yellow Rice

The only hard to find ingredient is the Bijol powder. Try a Cuban market or online at Cuban Food Market and Amazon.
Yield: 6 servings
Ingredients
2 tablespoons olive oil
1 white onion, diced
2 cloves garlic, crushed and chopped fine
3 cups chicken broth
1 teaspoon Bijol powder
1 teaspoon kosher sea salt, or to taste
freshly ground pepper, to taste
1 1/2 cups uncooked long grain white rice
Method
In a large sauce pan, sauté the onion in olive oil until translucent. Add the chopped garlic and cook an additional minute, stirring frequently.
Add rice, chicken broth, Bijol, salt, and pepper. Bring to a boil, reduce heat to low, cover, and simmer until rice is fully cooked and most of the liquid has been absorbed - about 30 minutes. When finished, fluff the rice with a fork. Serve immediately.
