Veggies | Swiss Chard Tzatziki

A good way to use chard, we really liked it. Serve with toasted pita or other bread. We cut up some olive bread, drizzled olive oil on it, then toasted. Also used pita chips, same method - cut up, drizzle with olive oil, and toast in a 350 degree oven.

Ingredients

1 cup Swiss chard, ribs removed and finely chopped

1 to 2 cloves of garlic, microplaned or smashed to a pulp

1/4 teaspoon kosher sea salt

1 cup Greek yogurt

1 tablespoon extra-virgin olive oil

1 tablespoon freshly squeezed lemon juice

a dash of cayenne, optional

 

Method

Cook chopped chard leaves in salted boiling water until tender, about 3 to 5 minutes. Drain, rinse with cold water, and squeeze out excess water.

In a bowl, combine garlic, salt, yogurt, olive oil, lemon juice, and cayenne. Add chard and mix. Adjust seasonings.
