Mexican | Cabbage Salad

This pickled cabbage slaw is a great side dish to Mexican food.
Ingredients
3 cups green cabbage, cored and thinly sliced (I use a Keyocera mandoline.)
1/2 cup radishes, thinly sliced (I use a Keyocera mandoline.)
2 green onions, tops trimmed and thinly sliced
1/2 cup red wine vinegar
1 teaspoon kosher sea salt
1 teaspoon sugar
1-1/2 tablespoons extra-virgin olive oil
2 tablespoons fresh cilantro leaves, chopped
freshly ground pepper, to taste
Method
Combine the cabbage, radishes, green onions, vinegar, salt and sugar in a sealable plastic bad and mix well. Expel as much air as possible and seal the bag. Allow the vegetables to marinate for at least 30 minutes.
Remove the vegetables from the marinating liquid and drain well, discard liquid.
Add olive oil, cilantro and pepper. Toss well, adjust seasoning.
