Sweets | Banana Nut Bread

My grandma's recipe, she made this all the time for us. I did make two changes though. I used butter instead of shortening and I toasted the walnuts. It was soft and delicious.

Yield: 2 small loaves or one regular sized loaf

Ingredients

1 3/4 cup flour

2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon kosher sea salt

1/2 cup walnuts, toasted and chopped

2/3 cup lightly packed brown sugar

1/3 cup (5 tablespoons) unsalted butter, room temperature

2 eggs, unbeaten

1 cup mashed ripe bananas

 

Method

Preheat oven to 350 degrees. Butter and flour two small loaf pans.

Mix together flour, baking powder, baking soda, and salt. Set aside.

In a mixer, cream sugar and butter. Add eggs and beat well. Mix in mashed bananas, then flour mixture, mixing until smooth. Stir in nuts.

Pour into buttered and floured loaf pans.

Bake at 350 degrees for 35 minutes or until done when tested with a toothpick. Cool in pans for 5 minutes, then remove and cool on a rack. If baking a single loaf, baking time is one hour.
