American | Bacon Cheeseburger Sliders

This was delicious and juicy. I wanted to make an all-American burger, so I used beef, Applewood smoked bacon, caramelized red onions, and sharp cheddar cheese.
Yield: as many as you want
Ingredients
mini hamburger buns, split and lightly grilled
Applewood smoked bacon, cut in half, cooked
caramelized red onions
sharp cheddar cheese slices
ground chuck 80% lean
kosher sea salt, to taste
freshly ground pepper, to taste
ketchup, to taste
yellow mustard, to taste
Method
To caramelized the onions: thinly slice the onions and cook low and slow in olive oil, salt onions while cooking. Cook until soft and caramelized. These take about 45 minutes.
To make flat bacon: Preheat oven to 375 degrees. On a parchment lined sheet pan, lay the bacon out so that it does not overlap. Place a second sheet pan on top of the bacon and cook until browned and crispy. This takes about 20 to 30 minutes.
To make burgers: Shape patties, season with salt and pepper. Grill 3 to 4 minutes per side, depending on thickness. At the very end, put cheese on and melt slightly.
To assemble: bottom bun, ketchup, mustard, meat, cheese, onions, bacon, and top bun. Eat!
