Thai | Asian Crispy Beef with Brown Rice Noodles

This is a Thai-inspired dish. It's from Jamie Oliver's Everyday Super Food cookbook with some modifications made by me.

Yield: 2 servings

Ingredients

1 tablespoon unsalted peanuts

2 cloves of garlic

1-inch piece of gingerroot

sesame oil

Chinese Five Spice powder

7 ounces lean ground beef

kosher salt, to taste

1 teaspoon honey

1 teaspoon fish sauce

1 teaspoon reduced-sodium soy sauce

2 limes

5 ounces brown rice noodles

2 green onions

1 fresh red chile (optional)

mixed fresh veggies (lettuce, arugula, carrots, radishes, watercress, baby spinach)

4 sprigs fresh cilantro

 

Method

Measure and prepare the ingredients: Lightly toast the peanuts in a pan, then crush in a mortar and pestle. Peel, grate or mince the garlic. Peel, grate or mince the gingerroot. Measure the honey, fish sauce, soy sauce, and juice of two limes into a small jar with a lid for the dressing. Thinly slice the green onions and red chile, if using. Wash and prepare any veggies that you are using, including the cilantro.

Cook the beef: Put 1 tablespoon of sesame oil in a frying pan. Add the ground beef. Sprinkle with Chinese Five Spice powder and season with a little salt. Add half of the garlic and half of the ginger. Add the honey. Cook on medium heat until the beef is browned and crispy.

Add the remaining garlic and ginger to the jar with the dressing, give the jar a shake.

Cook the noodles according to package directions.

Arrange all components on a plate and top with dressing.
