Delicious and not too sweet, a grown-up cookie.
Yield: 40 cookies
Ingredients
4 3/4 ounces unsalted butter at room temperature
2 ounces powdered sugar
1 teaspoon vanilla
6 ounces all-purpose flour
1 tablespoon anise seed
2 egg whites, beaten
turbinado sugar to decorate
Method
Preheat oven to 375 degrees.
Cream butter and sugar until light and fluffy, then add vanilla.
On a low speed, add in flour and then the anise until the dough comes together.
Remove the dough from the mixer and roll into 1-inch thick logs. Brush the exterior of the logs with egg whites and roll in turbinado sugar to coat.
Cut the logs into 1/2 inch circles. Place cookies onto a parchment lined baking sheet. Bake for 15 to 20 minutes or until lightly golden. You can freeze dough logs, without egg whites and sugar on the outside, for up to 6 months.
